The Vollrath 38204 ServeWell® SL hot food table is equipped with four food wells—each of which are made of self-insulating fiber-reinforced resin to reduce overall energy use. As many as four standard food pans can be implemented on this unit, though it also accepts standard adapter plates and insets. Over time, they resist pitting and rusting, and water buildup can be cleaned off their smooth surfaces. Each well includes no-drip lips to keep the surface clean and promote a sanitary serving station. The top and undershelf have a 20-gauge stainless steel construction, and its adjustable stainless steel legs enable the 6011⁄16-inch-wide by 291⁄2-inch-deep by 34-inch-high unit to be installed on uneven flooring with minimized wobbling risks.
This Vollrath 38204 hot food table will hold precooked products at 150 degrees Fahrenheit—10 degrees above the danger zone—as the user covers pans, maintains water levels, and frequently stirs food. Though the wells are self-insulated, each one includes a correlating thermostatic heat control so users can adjust temperatures as needed. Mechanical guards cover the controls, protecting them from accidental bumping, and capillary tube thermostats supply additional power as needed. Nonstick and easy to clean, the dome heating elements resist scale buildup to ensure proper operation over time, reducing danger zone risk. When water levels plummet, users are notified with a glowing indicator light.
