Raspberry is one of the great tests of an eau-de-vie distiller, because the fruit is almost all water and aroma — which is why Hans Reisetbauer's Himbeere requires 33 kilograms, nearly 73 pounds, of ripe raspberries for every liter of spirit. The berries are harvested at peak aromatic intensity in August and September, washed, mashed, and fermented in stainless steel for just five days at a precisely held 16.5°C — a short, cool ferment that protects the delicate volatile compounds that make raspberry smell like raspberry. Double distillation in a Christian Carl copper pot still keeps only the heart of each run, then the spirit rests a minimum of three years in stainless steel before being cut to 41.5% ABV with spring water from the Mühlviertel. Hans has done something clever here: he's captured not just the tart red fruit but the slight bitterness of the citrusy green seeds, so the spirit tastes like the whole berry rather than a syrup. Expect lively, nuanced raspberry with light lemon on the nose, opening into subtle sour cherry, strawberry, lemon zest, and almond, finishing faintly floral with raspberry leaf, violet, and honeysuckle — light-footed on the palate, yet with a long, powerful finish.
