Select Barrel is the young amber Clément — the bridge between the estate's grassy blancs and the four-year VSOP. Homère Clément, a doctor and mayor, bought the Domaine de l'Acajou in Martinique in 1887 and, having studied brandy-making in France, began making rhum agricole from fresh cane juice; today the rhum is distilled at the Simon distillery and aged and blended at Habitation Clément, the estate that's now a museum, gallery, and garden. Select Barrel is fresh cane juice distilled on a copper Creole column, aged a minimum of twenty-one months in new American oak barrels in the Habitation Clément cellar — Difford's confirms the cask and the minimum — slowly hydrated over eight months, and bottled at 40% ABV with nothing added under the AOC. Under two years in new oak gives it a golden tint and a first layer of vanilla without burying the cane: expect a nose of fresh cane, orange peel, and green apple with a light vanilla-and-toast note from the new barrel, opening into a bright, lightly sweet palate where the grassy, vegetal character of the blanc meets soft caramel and a peppery spice, finishing crisp and moderately long.
